For the Biryani:

Ginger 1/2 inch piece
Green Chillies 3 to 5, adjust to taste
Garlic 2 cloves
Oil 2 tablespoons
Red/Yellow/Green Bell Pepper 1, chopped
Carrot (Gajjar) 1, cut into julienne
Ghee As required, for garnish

For Spices:

Cinnamon Stick (Dalchini) 1-inch piece
Dry Red Chilli 1
Bay leaves (Tej Patta) 1
Whole Black Peppercorns 1/4 teaspoon
Turmeric Powder (Haldi) 1 teaspoon
Black Pepper Powder 1 teaspoon
Red Chilli Powder 1/2 teaspoon
Cumin Seeds (Jeera) 1 teaspoon
Coriander Seeds (Dhania) 1/2 teaspoon
Amchur (Dry Mango Powder) 1/2 teaspoon
Salt To taste

For Chatpata Aloo:

Ingredient Quantity
Potatoes (Aloo) 2, chopped into cubes
Chaat Masala Powder 1/4 teaspoon
Lemon juice From 1 lemon
Black Pepper Powder 1/4 teaspoon
Salt To taste

Preparation Time: 20 minutes

Cooking Time: 30 minutes

Total Time: 50 minutes

Yield: Serves 4-6 people


Instructions:

  1. Prepare the Rice:

    • Begin by soaking the Basmati rice in water for 15 to 30 minutes to allow the grains to expand. This helps the rice cook evenly and remain fluffy.
  2. Tempering the Spices:

    • In a dry pan, add the star anise, cloves, cinnamon stick, dry red chilli, bay leaves, black peppercorns, cumin seeds, coriander seeds, turmeric powder, red chilli powder, black pepper powder, and amchur powder. Dry roast these spices on low flame for about 2 to 3 minutes until their aroma is released.
    • You can either leave the spices whole or coarsely grind them, depending on your preference.
  3. Prepare the Chatpata Aloo:

    • Peel and chop the potatoes into small cubes. Soak the potato pieces in cold water for about 10 minutes or place them in the freezer for a few minutes to make them crispy.
    • Heat a tablespoon of oil in a heavy-bottomed pan and bring it to high heat. Add the potato cubes and shallow fry them until they are golden and crispy.
    • Remove the potatoes from the pan and place them on a kitchen paper towel to absorb excess oil. Season the potatoes with chaat masala powder, black pepper, salt, and freshly squeezed lemon juice. Set aside.
  4. Cooking the Biryani:

    • In the same heavy-bottomed pan, add 2 tablespoons of oil and heat it over medium flame. Add the sliced onions, green chillies, ginger, and garlic, and sauté them until the onions turn translucent.
    • Add the chopped bell peppers and carrots and sauté for another 2 minutes to soften them slightly.
    • Now, add the tempered spice mixture to the pan and cook for another minute, allowing the flavors to blend together.
  5. Assembling the Biryani:

    • Drain the soaked rice and add it to the pan. Pour in enough water (about 1.5 inches above the level of the rice). Ensure the rice is just barely submerged in water. Cover the pan with a lid and cook on low heat for 15 to 20 minutes or until the rice is fully cooked and tender.
  6. Final Touches:

    • Once the rice is cooked, fluff it gently with a fork. Top the biryani with the prepared Chatpata Aloo, a slice of lemon, and a slit green chilli for a burst of flavor.
    • Drizzle a little ghee over the top for richness and add freshly sautéed onions for extra flavor and texture.
  7. Serving:
