Instructions

  1. Prepare the Spaghetti:

    • Start by boiling the pasta. In a large saucepan, bring 500 ml of water to a boil and add 1 teaspoon of salt.
    • Add the Durum wheat spaghetti and cook until it reaches al-dente consistency, about 8-10 minutes.
    • Drain the pasta and rinse it under cold water to halt further cooking.
    • Toss the cooked spaghetti with a tablespoon of olive oil to prevent it from sticking together. Set aside.
  2. Make the Alfredo Sauce:

    • In a separate saucepan, melt 1 tablespoon of butter over medium heat.
    • Add 2 chopped cloves of garlic and sauté until golden brown and aromatic.
    • Reduce the heat to low, then pour in 1/2 cup of milk and 1/4 cup of fresh cream. Stir in 4 tablespoons of Parmesan cheese.
    • Season with salt, pepper, and mixed herbs to taste. Continue stirring until the sauce reaches a smooth and creamy consistency. Set aside.
  3. Prepare the Grilled Chicken:

    • Heat 1 tablespoon of olive oil in a heavy-bottomed pan over medium heat.
    • Add the chopped garlic and sauté until fragrant, about 1 minute.
    • Add the bite-sized chicken strips and cook for 2 minutes on each side until golden and slightly crispy.
    • Season the chicken with salt, pepper, dried oregano, and red chili flakes. Sauté until the chicken is fully cooked, about 10 minutes.
    • Remove the chicken from the pan and set aside.
  4. Combine the Pasta and Alfredo Sauce:

    • In the same pan used for the chicken, heat another tablespoon of olive oil over medium heat. Add a bit more chopped garlic and sauté until fragrant.
    • Pour in the Alfredo sauce and bring it to a gentle simmer.
    • Add the cooked spaghetti to the sauce and toss to coat evenly. Stir in the freshly chopped parsley for added flavor and color. Taste and adjust seasonings if needed.
  5. Serve the Grilled Chicken Spaghetti Pasta with Herbs:

    • Transfer the Alfredo-coated pasta to a serving dish or individual bowls.
    • Top with the grilled chicken strips, then garnish with freshly cracked black pepper, a sprinkle of red chili flakes, extra Parmesan cheese, and additional parsley leaves.

Serving Suggestion:
Serve your Grilled Chicken Spaghetti Pasta with Herbs alongside a refreshing Grilled Pineapple and Chicken Salad and a vibrant Apple and Ginger Cocktail for a delightful weekend dinner. This dish also pairs beautifully with a crisp white wine, such as a Sauvignon Blanc, to balance the richness of the Alfredo sauce.
