Beetroot, peeled and grated 1 Beetroot
Poppy Seeds 1/4 teaspoon
Salt and Pepper To taste
Britannia Cream Cheese, softened 1/8 cup
Unsalted Butter 2 tablespoons
Rye Bread (or whole wheat bread) 4 slices
Arugula Leaves (or lettuce) Half a bunch
Avocado, cleaned and thinly sliced 1 Avocado

Preparation Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Instructions

  1. Prepare the Filling:
In a mixing bowl, combine the grated radish and beetroot with the poppy seeds, and add salt to taste. Set aside.

  2. Make the Creamy Spread:
In a food processor, blend the cream cheese and unsalted butter until smooth and creamy. This will form a rich, velvety spread to complement the earthy vegetables.

  3. Assemble the Sandwiches:
Arrange the slices of rye or whole wheat bread on a clean surface. Spread the cream cheese and butter mixture evenly on each slice of bread. Sprinkle some ground pepper on top for an extra touch of flavor.

  4. Layer the Filling:
On two slices of bread, evenly spread the radish and beetroot mixture. Top it with thinly sliced avocado, layering it carefully. Then, arrange fresh arugula or lettuce leaves on top of the avocado for a crunchy, peppery finish.

  5. Close the Sandwiches:
Place the remaining slices of bread on top to complete each sandwich. Gently press down on the sandwiches with your palm to help them hold together.

  6. Trim and Slice:
Trim off any crusty edges from the bread, if desired, and cut each sandwich into four neat triangles. This gives your sandwiches a more refined and elegant appearance, perfect for tea-time gatherings.

  7. Serve:
Serve these light and refreshing tea sandwiches immediately. Pair them with a chilled Cold Coffee Smoothie or a steaming cup of Espresso Coffee for a perfect afternoon treat.

These tea sandwiches are a wonderful option for a light, vegetarian snack that combines the earthy sweetness of beets and radish with the creamy richness of avocado and cream cheese. The crunchy texture of arugula or lettuce adds the finishing touch, making these sandwiches both flavorful and visually appealing. Whether you’re hosting a tea party or just need a quick snack, this recipe is sure to impress!
