Kesar Paneer Ki Kheer Recipe – Cottage Cheese Milk Pudding

Kesar Paneer Ki Kheer is an indulgent and flavorful Indian dessert that comes together quickly and effortlessly. With its creamy texture, aromatic saffron, and the natural richness of crumbled paneer, this dessert is perfect for delighting unexpected guests or making a special treat for festive occasions. Its taste and texture closely resemble the beloved Rasmalai, but the preparation is much simpler, as the paneer is crumbled into the condensed milk rather than being shaped into balls.

Recipe Overview

  • Cuisine: North Indian
  • Course: Dessert
  • Diet: Vegetarian
  • Prep Time: 20 minutes
  • Cook Time: 40 minutes
  • Total Time: 1 hour

Ingredients

Ingredient Quantity
Milk 1 liter
Paneer (Homemade Cottage Cheese) 1 cup, crumbled
Saffron strands 15
Sugar 1/4 cup
Cardamom Powder (Elaichi) 1/2 teaspoon
Whole Almonds (Badam) 4, pounded
Pistachios 4, pounded
Edible Silver Foil/Leaf (Chandi Ka Vark) 1 leaf, for garnishing

Instructions

Step 1: Heat and Condense the Milk

  1. Pour the milk into a heavy-bottomed pan and place it over medium heat.
  2. Bring the milk to a boil, stirring occasionally to prevent it from sticking to the bottom.
  3. Once the milk comes to a boil, reduce the heat to low and let it simmer. Continue stirring as the milk condenses and reduces to half its original quantity. This process will take approximately 25 to 30 minutes.

Step 2: Infuse and Sweeten the Milk

  1. Add the saffron strands to the condensed milk, allowing them to release their vibrant color and fragrance.
  2. Stir in the sugar and cardamom powder, mixing well until the sugar dissolves completely.

Step 3: Incorporate the Paneer

  1. Gently fold the crumbled paneer (chenna) into the flavored milk. Ensure it mixes evenly and absorbs the sweetened saffron milk.
  2. Continue simmering the kheer for another 5 minutes, allowing the flavors to meld and the dessert to reach your desired consistency.

Step 4: Garnish and Serve

  1. Turn off the heat and transfer the Kesar Paneer Ki Kheer into a serving bowl.
  2. Garnish the dessert with pounded almonds and pistachios for added crunch and elegance.
  3. Place a sheet of edible silver foil (Chandi Ka Vark) on top for a luxurious finishing touch.
