Prepare the Coffee
Start by brewing the coffee using a moka pot. Once brewed, allow it to cool down to room temperature. This step is essential to ensure the proper texture of the muffins. -
Cream the Butter and Sugar
In a large mixing bowl, place the softened butter and sugar. Using electric beaters or a stand mixer, beat the mixture until it becomes smooth and creamy. This process incorporates air into the mixture, giving the muffins their light texture. -
Add the Eggs
Gradually add the first egg to the butter and sugar mixture while continuing to beat. Once fully incorporated, add the second egg and beat again until well combined. It’s crucial that both eggs are absorbed completely before adding the next one, as this ensures a smooth batter. -
Combine the Dry Ingredients
In a separate bowl, sift the all-purpose flour, baking powder, and baking soda. Once sifted, add the dry ingredients directly to the wet mixture. Stir gently until the dry ingredients are mostly combined. -
