Instructions for Chatpata Rajma Salad

  1. Soak and Cook the Rajma (Kidney Beans):
Begin by soaking the rajma (kidney beans) in plenty of water overnight. After soaking, drain the water and transfer the beans into a pressure cooker. Add fresh water and cook on medium heat for about 5-6 whistles. Once the pressure cooker cools down, lower the heat and simmer the beans for an additional 20 minutes. Allow the pressure to release naturally. The beans should be soft yet firm to the bite. If there’s excess water, drain it off and set the cooked rajma aside to cool.

  2. Prepare the Salad Ingredients:
While the rajma is cooling, prepare the vegetables. Finely chop the onion, tomato, and green chillies. Pick fresh mint leaves from the bunch and finely chop them as well.

  3. Assemble the Salad:
In a large mixing bowl, combine the cooked rajma, chopped onions, tomatoes, green chillies, and mint leaves. Sprinkle the chaat masala powder and salt over the mixture, and drizzle the fresh lemon juice for that burst of tanginess.

  4. Mix and Adjust the Flavors:
Toss all the ingredients gently to combine, ensuring that each bite is bursting with flavor. Taste the salad and adjust the salt or lemon juice as needed, depending on your preference.

  5. Serve and Enjoy:
Once the salad is well-mixed, place it in the refrigerator to chill for about 15 minutes. Serve the Chatpata Rajma Salad chilled, as a refreshing side dish to complement your meal.

For an extra special touch, pair this salad with Missi Roti and Cauliflower and Vegetable Curry for a delightful North Indian-inspired meal. Enjoy!

This Chatpata Rajma Salad not only packs a punch of flavors but is also high in protein, making it a healthy addition to your meals. It’s a perfect combination of tangy, spicy, and refreshing elements that makes it an irresistible side dish or snack for any occasion.
