Onion 1, finely chopped

Cumin seeds (Jeera) 1/2 teaspoon
Mustard seeds (Rai/ Kadugu) 1/4 teaspoon
Curry leaves 4-5 leaves

Instructions:

  1. Prepare the Ingredients:
    Begin by finely chopping the tomato, onion, and cucumber (if using). Set these aside for later use.

  2. Whisk the Yogurt:
    Take a bowl and add the curd (yogurt). Pour in a little water and whisk the curd until smooth and creamy. Add the finely chopped vegetablesโ€”tomato, onion, and cucumber (if using)โ€”to the yogurt mixture. Season with salt to taste, and mix well.

  3. Prepare the Tadka:
    Heat a tadka pan or small frying pan over medium heat. Add the required amount of oil to the pan. Once the oil is hot, add the curry leaves, cumin seeds, and mustard seeds. Let them crackle for about 10-15 seconds, releasing their aromatic flavors.

  4. Combine the Tadka with Raita:
    Once the spices have crackled, turn off the heat. Carefully pour the hot tadka over the prepared yogurt mixture. Stir well to combine the flavors of the tempering with the raita.
