Instructions
- Begin by chopping the white chocolate into large pieces. Place it in a heatproof bowl.
- Melt the white chocolate either in the microwave or using a double boiler method. Once the chocolate has melted, add the butter (cut into small cubes) and heat for a few more seconds until the butter is fully melted. Stir everything well using a spatula.
- In a separate bowl, combine the eggs with the powdered sugar. Whisk the mixture with an electric hand mixer for a couple of minutes until it becomes light and fluffy.
- Once the egg mixture is fluffy, add the melted chocolate and butter mixture, continuing to whisk to incorporate everything smoothly.
- Scrape the seeds from the vanilla bean pod and add them to the bowl, along with the almond flour. Mix well with the electric mixer until fully combined.
- Grease five small aluminum ramekins with butter. Sprinkle a teaspoon of brown sugar into the center of each ramekin for an extra touch of sweetness and to help the cakes release easily.
- Pour the prepared batter evenly into the ramekins, filling each about three-quarters full.
- Preheat the oven to 180°C (350°F) with static heat. Bake the lava cakes for 16 to 17 minutes. The edges should be set, but the center should still be soft and molten.
- Once baked, carefully remove the cakes from the oven. Let them sit for a minute or two before gently inverting them onto serving plates. Serve immediately and enjoy the gooey, indulgent white chocolate center.
