Crispy South Tyrolean Frittelle

Instructions:

  1. Begin by cracking the egg into a mixing bowl and adding the powdered sugar, a pinch of fine salt, and the vanilla bean (split and scraped, or if using vanilla extract, add a few drops). Use a whisk to blend these ingredients together until smooth and well combined.

  2. Slowly incorporate the sifted all-purpose flour into the egg mixture. Continue to mix until the batter reaches a creamy and dense consistency, ensuring there are no lumps and it is thick enough to coat the back of a spoon.

  3. In a wide, shallow pan, pour about three fingersโ€™ worth of sunflower seed oil. Heat the oil to approximately 180ยฐC (350ยฐF). You can use a thermometer to ensure the temperature is correct.

  4. While the oil is heating, prepare a piece of kitchen paper on a plate to drain the fried frittelle later.

  5. Once the oil is hot, take a special frittelle iron or a similar mold (such as a waffle iron or cookie cutter mold) and dip it into the batter, ensuring it is evenly coated.

  6. Gently lower the coated iron into the hot oil, making sure it is submerged enough for the batter to fry but not so deep that the iron itself is submerged. Fry 3-4 pieces at a time, flipping them to ensure both sides turn golden brown and crispy.

  7. Once they are golden on both sides, carefully remove the frittelle from the oil using tongs or a slotted spoon, allowing any excess oil to drip off before placing them on the paper to drain.

  8. Repeat this process, dipping the mold into the batter each time, and frying until all the batter is used up. You should have about 45-50 frittelle, depending on the size and shape of your mold.

  9. Optional: You can also experiment with different shapes, creating various designs for your frittelle to add a fun twist to this traditional dessert.

  10. Serve warm or let cool slightly, dusting with powdered sugar for an extra touch of sweetness.
