Chickpeas (Kabuli Chana or Chole), soaked for 8 hours and cooked 1 cup
Sesame seeds (white) 2 tbsp
Garlic cloves, roasted 4 cloves
Lemon juice 1 tbsp
Cumin powder ½ tsp
Olive oil ¼ cup
For Paneer Bhurji Quantity
Onion, finely chopped 1
Green bell pepper (Shimla Mirch), finely chopped 1
Carrot, grated 1
Paneer (cottage cheese), grated ½ cup
Cheese, grated ¼ cup
Cumin powder ¼ tsp
Red chili powder ¼ tsp
Salt, to taste
Olive oil 2 tsp

Brown bread slices 12

Instructions

Step 1: Prepare the Hummus

To make the hummus, first, cook the soaked chickpeas in a pressure cooker for about 30 minutes over low heat. After cooking, let the pressure release naturally. Drain the water from the chickpeas and allow them to cool. In a blender, combine the chickpeas, roasted sesame seeds, lemon juice, garlic, olive oil, cumin powder, red chili powder, and a little water. Blend to a smooth but thick consistency. Transfer the hummus into a bowl and set it aside.

Step 2: Prepare the Paneer Bhurji

Heat olive oil in a pan. Once hot, add chopped garlic and onions, sautéing until the onions turn soft and translucent. Add the chopped green bell pepper and grated carrot, cooking for a few minutes until softened. Sprinkle in cumin powder, red chili powder, and salt, followed by the grated paneer. Mix well and cook for a few more minutes. Turn off the heat and let the paneer bhurji mixture cool down.

Step 3: Assemble the Grilled Sandwich

Take a grill pan and lightly grease it with butter. Place two slices of bread on the pan. Spread a generous amount of hummus on each slice. On top of the hummus, add a portion of the prepared paneer bhurji mixture. Grate some cheese over the paneer mixture. Place another slice of bread on top to form a sandwich.

Grill the sandwich on both sides until the bread turns golden brown and crispy. Once done, remove from the pan and serve hot.
