Lemon Juice 2 tablespoons
Ghee 2 tablespoons (divided)

Instructions

Step 1: Prepare the Filling

  1. Remove the seeds from the dates and finely chop them.
  2. In a mixing bowl, combine the chopped dates, cashew nuts, green chillies, and ginger. Add a pinch of salt, mix well, and set aside.

Step 2: Cook and Prepare Raw Bananas

  1. Boil raw bananas in a pot of water for approximately 15 minutes or until soft.
  2. Once boiled, cool the bananas completely, peel off the skin, and grate them into a bowl.

Step 3: Sauté the Mixture

  1. Heat 1 teaspoon of ghee in a pan over low heat.
  2. Add cumin seeds and allow them to crackle.
  3. Add the chopped onion, green chillies, and ginger. Sauté until the onions turn golden brown.
  4. Stir in the grated banana, salt, red chilli powder, dry mango powder, coriander powder, clove powder, cinnamon powder, cardamom powder, and gram flour.
  5. Add lemon juice and mix well until all the ingredients are thoroughly combined. Stir the mixture for 3–4 minutes, then remove from heat and let it cool.

Step 4: Form the Tikkis

  1. Once the mixture has cooled, add chopped coriander leaves and mix well.
  2. Divide the banana mixture into equal portions.
  3. Take one portion in your palm and flatten it into a circular shape.
  4. Make a cavity in the center and fill it with a small amount of the dates filling.
  5. Gently cover the filling with the banana mixture and seal the tikki from all sides. Repeat until all tikkis are prepared.

Step 5: Shallow Fry the Tikkis

  1. Heat a skillet over low-medium heat and add 1 tablespoon of ghee.
  2. Place the tikkis on the skillet and shallow fry them on both sides until they turn golden brown.
  3. Frying each tikki will take about 8–10 minutes. Adjust the heat as necessary to ensure even cooking.

Step 6: Serve

  1. Remove the tikkis from the skillet and place them on a serving plate.
  2. Serve the Raw Banana Tikkis warm with Dhaniya Pudina Chutney and a cup of Adrak Chai for a light, flavorful snack.
