Jowar Jo Dodo Recipe – A Traditional Sindhi Sorghum Roti

Jowar Jo Dodo is a quintessential Sindhi flatbread made from Jowar Flour (Sorghum), celebrated for its gluten-free nature. Instructions

  1. Prepare the Dough:
    In a mixing bowl, combine chopped onion, methi leaves, coriander leaves, green chili, and salt. Mix everything thoroughly.

  2. Mix with Jowar Flour:
    Add Jowar Flour and cooking oil to the mixture and combine well until you form a crumbly texture. Gradually add just enough water to bring the dough together into a stiff consistency. Drizzle a few drops of oil over the dough and knead it to smooth out any cracks.

  3. Let the Dough Rest:
    Cover the dough with a damp cloth or plastic wrap and set it aside for a few minutes to rest and allow the flavors to meld.

  4. Roll the Dodos:
    Heat a tawa or flat griddle on medium-high heat. Once hot, divide the dough into equal-sized portions.

    To flatten the dough, place a dampened napkin or a sheet of parchment paper on a flat surface and grease it lightly with oil. Grease your fingers with some oil as well.

    Take one dough ball and gently press it down, flattening it into a 4-inch round with medium thickness using your fingers and palms.

  5. Cook the Dodo:
    Carefully flip the flattened dough onto the hot tawa, with the parchment paper or napkin facing up. Gently peel off the sheet, ensuring that the dough stays intact.

    Drizzle ghee on top and cook the dodo on medium flame, turning it occasionally until both sides are golden brown and crisp, with lovely brown spots.

  6. Serve Hot:
    Once cooked, remove the dodo from the tawa and keep it covered to retain its warmth. Repeat the process with the remaining dough portions.
