Curry Leaves A handful

Instructions

  1. Soak the Dal: Start by soaking the Toor Dal (Arhar Dal) and Chana Dal in water overnight or for at least 4 hours. Drain the water after soaking, and set the dal aside to be used in the next step.

  2. Grind the Dal: In a blender or food processor, add the soaked dals, along with the green chilies, ginger, and cumin seeds. Grind these ingredients into a coarse paste. Be sure not to add water while grinding, as adding water could make the vadas absorb too much oil during deep frying.

  3. Prepare the Mixture: Transfer the coarse dal paste into a large mixing bowl. Add the methi leaves, turmeric powder, red chili powder, sweet corn, curry leaves, and salt. Mix the ingredients together until well combined.

  4. Heat the Oil: Heat oil in a medium-sized Kadai or frying pan over high heat. Once the oil reaches a smoking point, reduce the flame to medium to maintain an even frying temperature throughout.

  5. Shape the Vadas: Take a small lemon-sized ball of the dal mixture and flatten it gently with your fingers. Be sure not to make the vadas too thick or large, as this may affect the even cooking and texture.

  6. Fry the Vadas: Carefully slide the flattened vada into the hot oil. Fry in batches, ensuring that each vada is cooked evenly. Turn the vadas occasionally to allow them to cook to a golden brown color on all sides. The vadas should be crispy on the outside and soft on the inside.

  7. Drain Excess Oil: Once the vadas are cooked and golden brown, remove them from the oil and place them on a paper towel to drain off any excess oil.
