Prepare the Ingredients:
Wash the Gawar Phali (cluster beans) thoroughly. Trim the ends and chop them into small pieces. -
Heat the Spices:
In a heavy-bottomed pan, heat 1 tablespoon of oil over medium heat. Once the oil is hot, add 1 teaspoon of mustard seeds. Let them crackle for a few seconds before adding ½ teaspoon of cumin seeds and a pinch of asafoetida (hing). Stir well. -
Sauté the Onions and Spices:
Add the chopped onions and sauté them until they turn soft and translucent. Sprinkle in ½ teaspoon of turmeric powder and the slit green chillies. Stir the mixture to blend the spices well with the onions. -
Add the Tomatoes:
Now, add the chopped tomatoes and cook them until they turn soft and mushy. This will help the tomatoes release their juices, creating a flavorful base for the curry. -
Cook the Cluster Beans:
