Instructions

Step 1: Prepare the Ingredients

To begin with, gather and prep all your ingredients. Chop the onions, garlic, ginger, and slit the green chilies. Cut the bottle gourd into 1/2 inch discs and set them aside. Make a puree of the tomatoes and keep it ready.

Step 2: Grind the Paste

In a mixer grinder, combine the roasted peanuts, sesame seeds, and grated coconut. Add a little water to facilitate grinding and blend everything into a smooth paste. Set this paste aside.

Step 3: Temper the Spices

Take a kadai or a deep pan and heat some oil. Once the oil is hot, add the mustard seeds, methi seeds, and curry leaves. Allow them to crackle and release their aroma. Once done, add the slit green chilies, chopped onions, ginger, and garlic. Sauté until the onions turn soft and translucent.

Step 4: Cook the Tomato Mixture

Next, stir in the tomato puree, turmeric powder, red chili powder, and coriander powder. Cook the mixture over medium heat, letting it boil for a couple of minutes. This helps the spices infuse into the gravy.
