Instructions:

Prepare the Moong Dal: 
 Start by dry roasting the moong dal in a frying pan for 2-3 minutes until lightly golden. Then, soak the dal in water for 15-20 minutes. After soaking, drain the water and transfer the dal to a saucepan. Add 4 cups of water, turmeric powder, cumin powder, green chilies, and salt. Cook the dal for 15-20 minutes or until it becomes soft and tender.

Sauté the Aromatics: 
 While the dal cooks, heat oil (or ghee) in a separate pan over medium heat. Add the chopped onions and sauté them until they turn soft and translucent.

Cook the Spices and Vegetables: 
 Add the grated ginger and chopped tomatoes to the onions. Stir well and cook for a couple of minutes, adding a little water to prevent burning. Let the mixture simmer until the tomatoes soften and the spices are well-cooked.
