Water As required to make the batter
Eno Fruit Salt 1 teaspoon

Instructions:

  1. Cook the Broken Wheat (Dalia):

    • Wash the broken wheat (dalia) thoroughly and set it aside.
    • In a pressure cooker, add 2 cups of water, a pinch of salt, and 1 tablespoon of oil. Stir in the broken wheat and mix well.
    • Close the lid of the pressure cooker and cook for 4 to 5 whistles on medium heat. Once done, turn off the heat and let the pressure release naturally.
    • Open the cooker and check if there is any excess water. If yes, cook the dalia on high heat, stirring constantly until all the water evaporates. Once done, transfer the cooked dalia to a large bowl and set aside to cool completely.
  2. Prepare the Pakora Batter:

    • After the cooked dalia has cooled, add 1/3 cup of gram flour (besan) to it. Stir to combine.
    • Add finely chopped onion, coriander leaves, and green chilies to the mixture.
    • Season with salt, turmeric powder, cumin seeds, and ajwain. Mix everything together.
    • Gradually add water to the mixture, just enough to form a thick batter that holds its shape when dropped from a spoon.
    • Finally, add the Eno fruit salt and mix gently to incorporate it into the batter.
  3. Cook the Dalia Pakoras:

    • Heat a Paniyaram pan or non-stick frying pan and add a little oil to each cavity (if using a Paniyaram pan) or in the base of the frying pan.
    • Once the oil is hot, spoon the pakora batter into each cavity or drop spoonfuls of batter into the hot oil if using a regular frying pan.
    • Cook the pakoras on medium heat until they turn golden brown and crispy on all sides, turning them carefully for even cooking.
    • If frying in a regular pan, allow them to fry in batches, ensuring the oil is hot enough to give them a crispy texture.
  4. Serve:

    • Once the pakoras are crisp and golden, remove them from the pan and place them on a paper towel to drain excess oil.
