Instructions

Step 1: Prepare the Potatoes

  1. Wash and boil the potatoes in enough water until they are soft and cooked through.
  2. Once boiled, peel the skin off and set the potatoes aside to cool.
  3. For faster cooking, you can pressure cook the potatoes for 2 whistles and allow the pressure to release naturally. Once done, peel and set aside.

Step 2: Prepare the Potato Mixture

  1. In a large mixing bowl, mash the boiled potatoes thoroughly.
  2. Add cornflour and salt to the mashed potatoes. Mix everything well to combine the ingredients evenly.
  3. Divide the mixture into 12 equal portions and set them aside.

Step 3: Prepare the Paneer Filling

  1. In a small bowl, combine the grated paneer, finely chopped garlic, onions, green chilies, coriander leaves, and red chili powder.
  2. Season the filling with salt and mix well. This mixture will serve as the delicious, garlicky filling for your tikkis.

Step 4: Form the Tikkis

  1. Take one portion of the mashed potato mixture and flatten it in the palm of your hand to form a small disk.

  3. Gently flip each tikki and cook the other side until it turns golden and crisp.
