Step 1: Preparing the Radish Greens
- Remove the leaves from the radishes and rinse the greens thoroughly in a bowl of water to remove dirt and mud. Repeat the process until clean.
- Drain the water and finely chop the greens.
Step 2: Cooking the Radish Greens
- Heat 1 teaspoon of mustard oil in a heavy-bottomed pan.
- Add the chopped radish greens and a pinch of salt. Stir-fry over low to medium heat until the greens begin to wilt.
- Cover the pan and cook for 8–10 minutes until the greens are soft.
- Uncover the pan immediately to retain the vibrant green color. Set the cooked greens aside.
Note: Radish greens take longer to cook than other leafy greens.
Step 3: Roasting the Potatoes
- Heat 2 tablespoons of mustard oil in the same pan.
- Add cumin seeds and broken dry red chilies. Sauté until the chilies are lightly roasted.
- Add the chopped garlic and stir-fry until aromatic.
- Add the diced potatoes and roast on medium-high heat until they are golden and slightly crisp.
Step 4: Adding Spices and Combining
- Sprinkle salt, red chili powder, turmeric powder, and cumin powder over the roasted potatoes. Toss well to coat evenly.
