  • 1 capsicum (green), chopped
  • 4 cashews
  • 1 tablespoon mustard oil
  • 1 green chilli, slit
  • Asafoetida, a pinch
  • Salt, to taste

For the Achari Masala:

  • 1 tablespoon coriander seeds
  • 1 tablespoon fennel seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon fenugreek seeds
  • 2 dried Kashmiri chillies
  • 1/4 teaspoon nigella seeds (kalonji)
  • 1 teaspoon cumin seeds

Preparation Time: 15 minutes

Cooking Time: 15 minutes

Total Time: 30 minutes


Instructions:

  1. Prepare the Cashew Paste:

    • Soak the cashews in hot water for 15–20 minutes.
  2. Make the Achari Masala:

    • Heat a pan and dry roast the coriander seeds, fennel seeds, mustard seeds, fenugreek seeds, dried Kashmiri red chillies, nigella seeds, and cumin seeds on low heat for 5–10 minutes until aromatic.
    • Let the roasted spices cool, then grind them into a fine powder using a mixer grinder.
  3. Make the Tomato-Capsicum Puree:

    • In the same grinder, blend the chopped tomatoes, capsicum, and soaked cashews into a smooth puree. Set aside.
  4. Cook the Base:

    • Heat mustard oil in a pan until it begins to smoke slightly. Reduce the heat and add the slit green chilli and a pinch of asafoetida. Sauté for 10–15 seconds.
    • Add the chopped onions and cook until golden brown.
  5. Combine the Masala:

    • Add the ground achari masala to the onions and sauté for 30 seconds.
    • Stir in the prepared tomato-capsicum-cashew puree and cook for 6–8 minutes, stirring occasionally.
  6. Add Paneer:

    • Gently fold in the paneer cubes and cook for 2 minutes, ensuring the paneer is coated with the masala.
    • Add salt to taste and mix well.
  7. Serve:

    • Serve hot with Makhani Dal, Jeera Rice, Boondi Raita, and Phulkas for a complete and satisfying meal.
