- Asafoetida, a pinch
- Salt, to taste
For the Achari Masala:
- 1 tablespoon coriander seeds
- 1 tablespoon fennel seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon fenugreek seeds
- 2 dried Kashmiri chillies
- 1/4 teaspoon nigella seeds (kalonji)
- 1 teaspoon cumin seeds

Prepare the Cashew Paste:
- Soak the cashews in hot water for 15–20 minutes.

Make the Achari Masala:
- Heat a pan and dry roast the coriander seeds, fennel seeds, mustard seeds, fenugreek seeds, dried Kashmiri red chillies, nigella seeds, and cumin seeds on low heat for 5–10 minutes until aromatic.
- Let the roasted spices cool, then grind them into a fine powder using a mixer grinder.

Make the Tomato-Capsicum Puree:
- In the same grinder, blend the chopped tomatoes, capsicum, and soaked cashews into a smooth puree. Set aside.

Cook the Base:
- Heat mustard oil in a pan until it begins to smoke slightly. Reduce the heat and add the slit green chilli and a pinch of asafoetida. Sauté for 10–15 seconds.
- Add the chopped onions and cook until golden brown.

Combine the Masala:
- Add the ground achari masala to the onions and sauté for 30 seconds.
- Stir in the prepared tomato-capsicum-cashew puree and cook for 6–8 minutes, stirring occasionally.

Add Paneer:
- Gently fold in the paneer cubes and cook for 2 minutes, ensuring the paneer is coated with the masala.
- Add salt to taste and mix well.

- Serve hot with Makhani Dal, Jeera Rice, Boondi Raita, and Phulkas for a complete and satisfying meal.
