Instructions:
- In a mixing bowl, combine the corn flour, whole wheat flour, 1 tablespoon of oil, and the required amount of salt. Mix the ingredients with your fingers to incorporate evenly.
- Gradually add water, kneading the mixture into a dough similar to roti dough. Knead for about 5-6 minutes to release the air in the flour, ensuring that the nachos will be crispier once fried.
- Cover the dough and allow it to rest for 10 minutes. After resting, knead it again for a minute to smooth it out.
- Roll the dough into medium-sized balls and then flatten them into tortillas (about the thickness of regular rotis).
- Heat a flat griddle or pan over medium heat and semi-cook the tortillas. Don’t brown them like rotis; just cook them slightly to remove excess moisture, ensuring they will be crisp when fried.
- Cut the tortillas into triangular shapes to create nacho pieces.
- Heat oil in a deep frying pan over medium-high heat. Fry the nachos in batches until they turn crisp and golden.
- Once fried, remove the nachos and place them on paper towels to absorb excess oil.
- While the nachos are still hot, sprinkle them with barbecue masala for a flavorful kick.
