Mexican Style Vegetable Fajita

Ingredients

  • 2 Onions, thinly sliced
  • 1 Green Bell Pepper (Capsicum), thinly sliced
  • 1 Red Bell Pepper (Capsicum), thinly sliced
  • 1 Yellow Bell Pepper (Capsicum), thinly sliced
  • 2 tbsp Extra Virgin Olive Oil
  • 1 cup Button Mushrooms, thinly sliced
  • 2 cloves Garlic, minced
  • 1 tsp Paprika Powder
  • ½ tsp Cumin Powder (Jeera)
  • Salt, to taste
  • 4 Corn Flour Tortillas

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Once the oil is hot, add the minced garlic and sauté until golden brown.
  3. Add the sliced onions and cook until they become translucent.
  4. Stir in the sliced bell peppers and cook until they are tender.
  5. Add the mushrooms and cook until they soften, followed by the paprika, cumin powder, and salt. Stir well and cook until the vegetables are tender and have absorbed the spices.
  6. Meanwhile, warm the tortillas in a separate pan or in the oven for 2 minutes on high heat until slightly browned.
  7. Fill each tortilla with the sautéed vegetables and serve with spicy Mexican salsa and mashed beans for an authentic Mexican experience.
