Ingredients:

  • 1 cup Pinto Beans (soaked in water overnight)
  • 1 Onion (chopped)
  • 1 Tomato (chopped)
  • 1 Avocado (peeled, seed removed, and chopped)
  • 1 tablespoon Adobo Sauce
  • 1 Chipotle pepper (chopped)
  • 2 tablespoons Lemon juice
  • A handful of Coriander (Dhania) Leaves (chopped)

Instructions:

  1. To begin, pressure cook the soaked Pinto Beans for 1 whistle in a pressure cooker, then cook on low heat for about 10 minutes (or until soft). Drain and allow them to cool completely.
