Aloo Patta Gobi Sabzi (Potato Cabbage Sabzi)

Ingredients:
- 2 potatoes, peeled and diced
- 1 onion, chopped
- 2 cups cabbage, finely shredded
- 1/4 tsp turmeric powder
- 1/2 tsp red chili powder
- 1 tsp coriander powder
- 1/2-inch cinnamon stick
- 2 cloves
- 1 bay leaf
- 1/2 tsp fennel seeds
- 1 tsp cumin seeds
- Salt, to taste
- 1 tsp oil
- Fresh coriander leaves, for garnish

Instructions:
- Wash and peel the potatoes. Cut them into cubes and keep them in water to prevent discoloration.
- Heat oil in a pan. Add cinnamon, cloves, bay leaf, fennel seeds, and cumin seeds. Cook for about 1 minute to release their fragrance.
- Add the chopped onions to the pan and cook until softened and slightly golden.
- Once the onions are cooked, add the cabbage and potatoes to the pan. Cook for about 1 minute, stirring occasionally.
- Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt. Add a little water and cook the mixture for 2-3 minutes, until the vegetables soften and the flavors meld together.
- Once the vegetables are tender, garnish with fresh coriander leaves.
- Serve hot with Palak Daal, Boondi Raita, and Phulkas for a complete lunch.
