Aloo Patta Gobi Sabzi (Potato Cabbage Sabzi)

Aloo Patta Gobi Sabzi is a simple, flavorful North Indian dish where potatoes and cabbage are cooked with everyday spices. Perfect for a quick lunch, it can easily be packed for your lunchbox. This vegetarian delight pairs wonderfully with Palak Daal, Boondi Raita, and Phulkas.

Ingredients:

  • 2 potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cups cabbage, finely shredded
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2-inch cinnamon stick
  • 2 cloves
  • 1 bay leaf
  • 1/2 tsp fennel seeds
  • 1 tsp cumin seeds
  • Salt, to taste
  • 1 tsp oil
  • Fresh coriander leaves, for garnish

Instructions:

  1. Wash and peel the potatoes. Cut them into cubes and keep them in water to prevent discoloration.
  2. Heat oil in a pan. Add cinnamon, cloves, bay leaf, fennel seeds, and cumin seeds. Cook for about 1 minute to release their fragrance.
  3. Add the chopped onions to the pan and cook until softened and slightly golden.
  4. Once the onions are cooked, add the cabbage and potatoes to the pan. Cook for about 1 minute, stirring occasionally.
  5. Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt. Add a little water and cook the mixture for 2-3 minutes, until the vegetables soften and the flavors meld together.
  6. Once the vegetables are tender, garnish with fresh coriander leaves.
  7. Serve hot with Palak Daal, Boondi Raita, and Phulkas for a complete lunch.
