Ingredients:

For the Fish:
- 4 Basa fish fillets, washed and cut into big chunks
- 1 Green bell pepper, cut diagonally
- 1 Red bell pepper (Capsicum), cut diagonally
- 1 Onion, sliced
- 2-inch piece of Ginger, thinly sliced
- 5 cloves Garlic, chopped
- 3 tbsp Corn flour
- Salt and Pepper, to taste
- 2 sprigs Spring onions (bulb & greens), chopped

For the Sauce:
- 1 tbsp Soy sauce
- 1 tbsp Red chilli sauce
- 1 tbsp Brown sugar (Demerara sugar)
- 1 tsp Dry ginger powder
- 1 tsp Chilli vinegar
- 1 tsp Corn flour

Instructions:

Prepare the Fish:
- Coat the basa fish chunks in corn flour, salt, and pepper.
- Heat enough oil in a kadai (deep pan) to fry the fish. Once the oil is hot, carefully drop the fish pieces one by one and fry until golden brown and crispy.
- Remove the fish from the oil and place them on a paper towel to drain excess oil.

Prepare the Sauce:
- In a bowl, combine soy sauce, red chilli sauce, brown sugar, dry ginger powder, chilli vinegar, and corn flour with 1 cup of water. Mix well and set aside.

Cook the Vegetables:
- Heat a wok with a little oil. Once hot, add the sliced ginger and chopped garlic. Sautรฉ until fragrant and softened.
- Add the sliced onions and cook until they turn translucent.
- Add the green and red bell peppers, cooking for about 10 minutes until they soften.

Combine Fish and Sauce:
- Add the fried fish pieces into the wok with the vegetables. Reduce the flame.
- Pour the sauce mixture over the fish and vegetables. Stir well and cook until the gravy thickens. Check the seasoning and adjust salt if needed.

- Turn off the heat and sprinkle chopped spring onions on top. Serve the Indo-Chinese Style Ginger Fish hot, along with Spicy Vegetable Noodles for a complete meal.
