Parsi Rotli Recipe – Soft Parsi Style Rotis

- 1/4 cup Milk

Prepare the Dough:
In a large bowl, combine the whole wheat flour and salt. Gradually add milk and a small amount of water, mixing to form a firm dough. Add a teaspoon of ghee to coat the dough and knead until smooth. -
Rest the Dough:
Cover the dough and set it aside to rest for 15 minutes. After resting, knead the dough again to smoothen it further and divide it into equal portions. -
Roll the Rotli:
Preheat a tawa or skillet over medium-low heat. Roll each portion of dough into a ball and flatten it using the palm of your hand. Roll out each ball into a thin circle (approximately 6 inches in diameter) on a floured surface, ensuring it doesn’t stick. -
Cook the Rotli:
Place the rolled dough on the preheated skillet. After a few seconds, small air pockets will form on the surface. Flip the rotli and press it gently with a folded kitchen napkin. Keep pressing until the rotli puffs up. Ensure you are cooking on low flame to prevent brown spots. -
Serve:
Once puffed, remove the rotli from the skillet and place it on a flat plate. Optionally, spread a little ghee on the top side for extra flavor.
