Maharashtrian Varan Phal is a comforting and flavorful dish thatโ€™s quite similar to Rajasthani Dhokli. It consists of wheat dumplings cooked in a spicy lentil mixture, using aromatic Maharashtrian spices. This one-pot dish is perfect for a wholesome dinner, offering a satisfying and nutritious meal.

Ingredients:

  • For the Dumplings:

    • 2 cups wheat flour
    • 1 tsp oil
    • 1/4 tsp ajwain (carom seeds)
    • Salt, to taste
  • For the Lentil Soup (Dal):

    • 3/4 cup arhar dal (tuar dal)
    • 1 tsp red chili powder
    • 1/4 tsp coriander powder
    • 1/4 tsp turmeric powder
    • 1/4 tsp mustard seeds
    • 1 tbsp oil
    • 2 kokum, soaked in water and extracted
    • 1 tsp sugar
    • Water, as needed
  • For Garnish:

    • 1 onion, chopped

Instructions:

  1. Make the Dumplings (Phal): In a bowl, combine the wheat flour, salt, ajwain, and oil. Add enough water to knead a smooth dough. Set aside for a few minutes.

  2. Prepare the Dal: In a pressure cooker, add arhar dal, garlic, and water. Cook for 3 to 4 whistles, then mash the dal well.

  3. Tempering the Dal: Heat oil in a pan, add mustard seeds and let them splutter. Add turmeric powder, red chili powder, and coriander powder, followed by a little water. Cook for 1 minute. Pour this tempering into the cooked dal along with kokum water, sugar, and additional water (2-3 cups). Let the dal simmer on low flame.

  4. Cook the Dumplings: Roll out the dough into a round shape and cut into diamond-shaped pieces. Drop these dumplings into the boiling dal and cook for 15 to 20 minutes, ensuring theyโ€™re fully cooked.

  5. Garnish and Serve: Garnish with freshly chopped onions. Serve hot with a dollop of ghee for extra flavor.
