Gujarati Tawa Handvo Recipe with Sweet Corn

The Tawa Handvo is a nutritious, protein-packed one-dish meal from Gujarat. In this recipe, we make it simple yet flavorful with the addition of high-quality hing (asafoetida), creating a deliciously savory and satisfying breakfast.


Ingredients

Main Ingredients:

  • 1/2 cup Rice (raw)
  • 1/2 cup Chana dal (Bengal gram dal)
  • 1/2 cup White Urad dal (whole)
  • 1 Green chili
  • 1 inch Ginger, chopped
  • Salt, to taste

Ingredients for the Seasoning:

  • 1/2 tsp Sesame seeds (til seeds)
  • 1 tsp Curry leaves, finely chopped
  • 1/4 tsp SSP Asafoetida (Hing)
  • 1/4 tsp Red chili powder
  • 1 tbsp Oil
  • 2 cups Sweet corn

Preparation Time: 20 minutes
Cook Time: 30 minutes


Instructions:

  1. Soak the Rice and Dal:
    Begin by washing and soaking the rice, chana dal, and urad dal together for 4 to 5 hours.

  2. Make the Batter:
    After soaking, grind the rice, dal, green chili, and ginger into a thick, slightly coarse batter using the soaking water. The texture should resemble fine semolina. The batter should be thick enough to fall in dollops when ladled. Stir in salt and let the mixture ferment for 8 hours.

  3. Check for Fermentation:
    Once fermented, the batter will rise. If the batter has not risen, mix in 2 teaspoons of eno fruit salt and stir until air bubbles appear.

  4. Prepare the Seasoning:
    Heat 1 tablespoon of oil in a non-stick skillet (8 inches in diameter) over medium-high heat. Add sesame seeds and curry leaves, letting them crackle. Reduce the heat to low and add red chili powder and asafoetida to the oil.

  5. Cook the Handvo:

    • Sprinkle the sweet corn evenly at the bottom of the skillet.
    • Pour two ladles of batter into the pan, spreading it gently across the surface. As the batter spreads, the seasoning will spread to the edges, creating a special crunch on the sides.
    • Lower the heat and drizzle a teaspoon of oil around the edges of the batter. Cover the pan and let it cook for 3-4 minutes until the top is cooked and no longer raw.
  6. Flip the Handvo:
    Once the top is set, use a broad flat spatula to gently flip the Tawa Handvo to the other side. Turn the heat to medium-high and allow the handvo to turn golden and crisp. Flip it again and let the other side crisp up slightly.

  7. Serve:
    Continue cooking the remaining batter in the same way. Serve the Tawa Handvo hot with Gor Keri (pickled raw mango) or enjoy with jaggery (gor) and homemade butter for a delightful breakfast or a wholesome weeknight dinner.
