Gujarati Style Adadiya Pak

Adadiya Pak is a popular winter special Gujarati sweet, known for its warm, comforting ingredients that help keep the body cozy during the cold season. This delicious sweet dish is made with a combination of black urad dal, ghee, khoya, and mixed nuts, making it a perfect treat for a nutritious breakfast or as a dessert.

Ingredients:

For the crumble:

  • 2 cups Black Urad Dal (Whole), ground to make atta
  • 1/4 cup Milk
  • 1/4 cup Ghee

Other Ingredients:

  • 1 cup Ghee
  • 250 grams Khoya (Mawa)
  • 1 tablespoon Gond (Natural Gum), fried in ghee until crisp
  • 1 cup Mixed Nuts (e.g., almonds, raisins, cashews, pistachios)

For the sugar syrup:

  • 1 1/2 cups Sugar
  • 1 cup Water

Indian Spices (Optional):

  • 1 1/2 tablespoons Cardamom Powder (Elaichi)
  • 1 1/2 tablespoons Cloves (Laung), powdered
  • 3 tablespoons Dry Ginger Powder
  • 1 tablespoon Peepramul Powder (Ganthoda)

For Garnishing:

  • A few Cashew Nuts

Preparation Time: 15 minutes
Cooking Time: 45 minutes

Instructions:

  1. In a mixing bowl, combine the urad dal atta, milk, and ghee. Mix well, then rub the flour mixture with your palms for 3-4 minutes to help it blend.

  2. Heat the ghee in a heavy-bottomed pan or kadai. Add the prepared flour mixture and stir continuously on medium heat until the mixture turns brown in color.

  3. Meanwhile, combine the sugar and water in a saucepan. Prepare a sugar syrup with a 1-string consistency and set it aside.

  4. When the flour mixture begins to brown, add the fried gond (edible gum) and grated khoya to the pan. Sauté for a few minutes to blend the flavors.

  5. Turn off the flame and add the chopped mixed nuts to the mixture. Stir well to combine.

  6. Allow the mixture to cool slightly. Once it reaches a lukewarm temperature, mix in the prepared sugar syrup. Stir everything together until well incorporated.

  7. Let the mixture set for a while. Once it has cooled and firmed up, shape it into your preferred form.

  8. Garnish with cashew nuts and serve the Gujarati Style Adadiya Pak with a cup of masala chai or coffee.
