Ingredients:
- 1 cup Arhar dal (Split Toor Dal)
- 1/4 cup Chana dal (Bengal Gram Dal), roasted
- 6 Dry Red Chillies
- 1 teaspoon Whole Black Peppercorns
- 1 teaspoon Cumin seeds (Jeera)
- 10 Curry leaves
- 1/4 teaspoon Asafoetida (Hing)
- Salt, to taste

Roast the Spices and Lentils:
Heat a heavy-bottomed pan over medium heat. Add the Arhar dal, Dry Red Chillies, Whole Black Peppercorns, Cumin seeds, Curry leaves, and Asafoetida. Roast the ingredients, stirring frequently, until they turn golden brown and release a fragrant aroma. -
Cool the Mixture:
Once roasted, remove the pan from heat and transfer the mixture onto a paper towel to cool completely. -
Blend the Podi:
Once the roasted ingredients have cooled, add them to a blender along with the roasted Chana dal and salt. Blend until you get a fine powder. -
Store and Serve:
Transfer the Paruppu Podi to an airtight container for storage. Serve with hot white rice, a dollop of ghee or gingelly oil, and crispy sutta appalam (roasted papad) on the side for a perfect meal.
