Avarekalu, or broad beans, is a flavorful dish from Karnataka, typically prepared during winter. This soft and aromatic bean is paired with everyday spices to create a hearty usli, perfect for a comforting meal.

Ingredients:

  • 2 cups Avarekalu (fresh or frozen)
  • 1 Onion, finely chopped
  • 3 Green chilies, finely chopped
  • 1-inch Ginger, grated
  • 1 tbsp Garlic, grated
  • 1 tbsp Lemon juice
  • A pinch of Asafoetida
  • 1/2 tsp Turmeric powder
  • Salt, to taste

For Tempering:

  • 1 tsp Mustard seeds
  • 1/2 tsp White urad dal
  • A few Curry leaves

Prep Time: 10 minutes
Cook Time: 30 minutes

Instructions:

  1. Heat oil in a pressure cooker. Add mustard seeds and white urad dal, allowing them to crackle.
  2. Once the seeds crackle, add curry leaves, green chilies, ginger, garlic, and onions. Sauté until the onions soften.
  3. Add the Avarekalu and cook for 3 to 4 minutes.
  4. Stir in turmeric powder and salt, and cook for an additional minute.
  5. Add lemon juice, close the cooker, and cook for 2 whistles.
  6. Let the pressure release naturally.
  7. Garnish with fresh coriander leaves.
  8. Serve Avarekalu Usli with Laccha Paratha and Boondi Raita for a complete meal.
