Ingredients:
- 225 grams All Purpose Flour (Maida)
- 3 tablespoons Flax Seed Powder (Flax Meal)
- 1-1/2 teaspoons Baking Powder
- 225 grams Salted Butter
- 200 grams Caster Sugar
- 1/2 cup Milk
- 1 teaspoon Vanilla Extract
- 3 tablespoons Cocoa Powder
Prep Time: 15 minutes
Cook Time: 30 minutes
Instructions:
-
Prepare the Flax Egg: In a mixing bowl, combine 3 tablespoons of flax seed powder with 9 tablespoons of water. Stir well and allow it to rest for 10 minutes. After this time, the mixture will become slimy, resembling an egg. This is your flax meal egg replacer.
-
Cream the Butter and Sugar: In a separate mixing bowl, cream together the salted butter and caster sugar until light and fluffy.
-
Add Wet Ingredients: Mix in the milk and vanilla extract to the butter-sugar mixture, stirring until creamy and well combined.
-
Add Dry Ingredients: Add the all-purpose flour, baking powder, and the flax egg to the wet mixture. Gently fold everything together until thoroughly combined.
-
Prepare the Batters: Divide the batter into two equal portions. To one portion, add the cocoa powder and mix until smooth to form a chocolate batter.
-
Preheat the Oven: Preheat the oven to 170°C (338°F) for 10 minutes. Line a baking tray with butter paper and grease with oil.
-
Assemble the Cake: Pour the vanilla batter into the prepared pan. Top with the chocolate batter in small circles. Use a fork or knife to gently swirl the two batters together, creating a marble effect.
-
Bake: Place the pan in the preheated oven and bake for about 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
-
Cool and Serve: Allow the cake to cool completely on a wire rack before slicing. Serve your Eggless Marble Cake as a delightful tea-time treat, paired with a Carrot and Peas Sandwich and Masala Tea. It also makes for a wonderful snack to pack in your kids’ lunchbox!
Enjoy this light and fluffy, eggless marvel that’s perfect for every occasion!
