Ingredients:
For Yele Kadubu:
- 1 ½ cups Whole Wheat Flour
- Water (as needed to form dough)
- Salt (to taste)
- 3 tablespoons Ghee
- Oil (as needed for greasing)
For Sweet and Spicy Red Onion Chutney:
- 2 Red Onions
- 10 cloves Garlic
- ¼ teaspoon Fenugreek Seeds (Methi Seeds)
- 10 Dry Red Chillies (adjust to taste)
- 1 tablespoon Tamarind Paste
- 5 tablespoons Powdered Jaggery (adjust to taste)
- Oil (as needed for cooking)
- Salt (to taste)

Instructions:

Prepare the Yele Kadubu:
- In a mixing bowl, combine the wheat flour, salt, and ghee. Mix well.
- Gradually add water, a little at a time, and knead the dough until smooth. Set it aside to rest for 10 minutes.
- Take a lemon-sized portion of the dough and roll it into a thin circle (like a phulka).
- Fold the rolled dough into a triangle and repeat with the remaining dough.
- Grease the idli steamer with a little oil and arrange the folded dough triangles inside.
- Steam the Yele Kadubu for 8 to 10 minutes until fully cooked.

Prepare the Sweet and Spicy Onion Chutney:
- Heat oil in a heavy-bottomed pan. Add the red onions, garlic, fenugreek seeds, and dry red chillies.
- Sauté until the onions become soft and translucent.
- Remove from heat and allow the mixture to cool.
- Transfer the cooled mixture to a grinder. Add the jaggery, tamarind paste, and salt, then grind into a smooth paste. Do not add water.
- Transfer the chutney to a bowl.

- Serve the Yele Kadubu warm with the Sweet and Spicy Onion Chutney. This dish is perfect for breakfast or tea-time snacks and pairs wonderfully with Filter Coffee or Masala Chai.
