Mexican Grilled Corn with Cheesy Garlic Mayo

The best way to enjoy sweet corn is by grilling it! This Mexican-style grilled corn on the cob combines the irresistible flavors of buttery, cheesy garlic mayo, with a zesty kick from lime and paprika. It’s the perfect snack to enjoy alone or paired with a warm cup of Masala Chai on a rainy day.

Ingredients:

  • 4 Sweet corn cobs
  • 3 tablespoons Salted butter
  • 1 tablespoon Paprika powder
  • 4 tablespoons Del Monte Cheesy Garlic Mayo
  • 1/2 Lemon, wedged
  • Fresh Coriander (Dhania) leaves, for garnish
  • 1 tablespoon Grated Parmesan cheese

Preparation Time: 5 minutes
Cook Time: 20 minutes

Instructions:

  1. Begin by pulling back the husks of the corn and tie them back to expose the kernels.
  2. Generously rub salted butter all over each cob.
  3. Spread Del Monte Cheesy Garlic Mayo on all sides of the corn.
  4. Sprinkle paprika powder evenly over the corn for a mild, smoky heat.
  5. Grill the corn on an oven grill or charcoal grill, turning occasionally, until fully cooked and lightly charred.
  6. Once done, remove the corn from the grill and squeeze fresh lime juice over each cob.
  7. Garnish with fresh coriander leaves and a sprinkle of grated Parmesan cheese.
