- 3 corn tortillas
- 2 apples, peeled and sliced lengthwise

- For the brown sauce:
- 2 tablespoons brown sugar (demerara sugar)
- 2 tablespoons sugar
- 1/3 cup salted butter
- 1/2 cup water
- A pinch of salt
- Vanilla ice cream (for topping, as required)
- Chopped walnuts (for topping, as required)

Prepare the apples: Peel the skin off the apples and slice them lengthwise. In a pan, heat 1 tablespoon of unsalted butter. Add the apple slices and cook for about 3 minutes until they soften. Sprinkle in the cinnamon powder and brown sugar. Stir well and continue to cook for another 4-5 minutes. Remove from heat and allow it to cool completely.

Make the brown sauce: In a saucepan, combine the brown sugar, white sugar, salted butter, water, and a pinch of salt. Heat the mixture on medium heat and bring it to a boil. Once boiling, whisk the mixture while it continues to cook. After about 3-4 minutes, the sauce will thicken slightly. Remove from the heat.

Prepare the tortillas: Lightly warm the tortillas so they don’t break when rolled. On each tortilla, place 2 full spoons of the cooked apples at one end. Fold in the sides of the tortilla and carefully roll it up, tucking in the edges to secure the apples. Repeat with the remaining tortillas.

Assemble and bake: Grease a baking pan with butter and place the rolled tortillas on the tray. Pour the brown sauce generously over the top of the tortillas. Let the tortillas sit for about 15 minutes to absorb the sauce. Preheat the oven to 180°C (350°F) and bake the enchiladas for 20 minutes, or until golden brown.
