Soak the Ingredients:
Begin by soaking the idli rice and poha in one bowl. In another bowl, soak the white urad dal along with methi seeds. Let them soak for a minimum of 6 hours. -
Grind the Urad Dal:
After soaking, grind the urad dal and fenugreek seeds into a smooth, fluffy batter. Add just enough water to achieve a very smooth consistency. Transfer the batter into a large container. -
Grind the Rice and Poha:
Next, grind the soaked rice and poha into a thick, smooth paste. Be careful not to add too much water, as it can make the batter too runny. -
Combine the Batters:
Mix the ground urad dal and rice-poha batter together. Add salt to taste. Set the batter aside and allow it to ferment for at least 12 hours or overnight. The batter should double in volume as it ferments. -
Prepare the Dosa:
Once the batter is fermented, gently stir it to combine. Be careful not to over-mix, as it can deflate the batter. Heat a skillet over medium heat. Test the temperature by sprinkling some water on the skillet – it should sizzle. -
Cook the Set Dosa:
Pour a ladleful of batter onto the skillet. Allow it to spread slightly on its own (the dosa will be thick, like a pancake). Cover with a lid and cook for a few minutes, allowing it to steam. Once the top is cooked, remove the dosa from the skillet. -
Serve:
Continue making the remaining dosas. Serve the Karnataka Style Set Dosas with three different types of chutneys, such as Tomato Onion Chutney, Coconut Coriander Chutney, and Ginger Walnut Chutney.
