Ingredients
- 1 cup Sooji (Semolina/Rava)
- 1 Onion, finely chopped
- 1 Tomato, chopped
- 1 Green Bell Pepper (Capsicum), chopped
- ¾ cup Mixed vegetables (beans, carrots, tomatoes, brinjal), finely chopped
- 1-inch Ginger, finely chopped
- 2 Green Chillies, slit
- 3 teaspoons Vangi Bath Powder
- 3 cups Water
- ½ Lemon
- Coriander (Dhania) Leaves, to garnish
- Fresh Coconut, grated, to garnish
- Salt, to taste
For Tempering
- 1 teaspoon Mustard Seeds (Rai/Kadugu)
- 1 teaspoon White Urad Dal (Split)
- ½ teaspoon Chana Dal (Bengal Gram Dal)
- Few Cashew Nuts, broken (optional)
- Few Curry Leaves
- 1-2 Dry Red Chillies, broken
- 1 pinch Turmeric Powder (Haldi)
- Oil, for cooking
- 1 tablespoon Ghee

Instructions
- Begin by roasting the semolina (rava) in a pan on medium flame. Stir continuously to ensure it doesn’t darken, and roast until aromatic. Set aside.
- For tempering, heat oil and ghee in a kadai (wok). Once hot, add mustard seeds and let them splutter.
- Add urad dal, chana dal, and let them crisp and brown lightly.
- Add the chopped onions and bell pepper. Sauté until the onions turn translucent.
- Add the mixed vegetables, a pinch of salt, and turmeric powder. Cook until the vegetables are tender.
- Stir in the Vangi Bath Powder and mix well.
- Add 3 cups of water and salt. Bring the mixture to a boil, then lower the flame.
- Gradually add the roasted rava, stirring continuously with one hand while adding to prevent lumps.
- Once all the rava is incorporated, cover the pan with a lid and let it cook for 2-3 minutes.
- Turn off the heat. Fluff up the Khara Bhath and garnish with chopped coriander leaves and grated coconut.
- Serve the Khara Bhath with South Indian Coconut Chutney and a cup of Masala Chai for a perfect breakfast experience.
