Burnt Garlic Chicken Fried Rice Recipe

Ingredients:

  • 200g boneless chicken
  • 12 garlic cloves
  • 2 ½ cups cooked rice
  • Olive oil, as required
  • ½ tsp crushed black pepper
  • 3 green chilies, sliced thin and straight
  • 1 ½ tsp soy sauce
  • ½ tsp vinegar
  • For burnt garlic:
    • 9 garlic cloves, sliced
    • 1 tsp olive oil

Preparation Time: 20 minutes
Cooking Time: 20 minutes

Instructions:

  1. Heat oil in a wok or pan and add garlic. Cook for 1 minute.
  2. Add onions and cook until they turn soft.
  3. Add chicken pieces and stir well. Cook until the chicken is tender, ensuring not to overcook it.
  4. Once the chicken is cooked, add salt, green chilies, crushed black pepper, soy sauce, and vinegar. Stir and cook for an additional 1 minute.
  5. Add cooked rice to the pan, and mix well. (You can use leftover rice or let freshly cooked rice cool before adding.)
  6. Stir-fry for 1 minute, then turn off the heat.
  7. In a small pan, heat olive oil and add sliced garlic. Cook until the garlic turns golden brown.
  8. Add half of the burnt garlic to the rice and mix it in.
  9. Garnish the fried rice with the remaining burnt garlic.
  10. Serve the Burnt Garlic Chicken Fried Rice with Indo-Chinese mixed vegetables for a perfect dinner.
