Spiced Rajma Pulao

Ingredients
- 1 cup rice
- 1/4 cup kidney beans (rajma), soaked for 8 hours
- 2 cloves garlic, finely chopped
- 2 cloves
- 1 bay leaf
- 1-inch cinnamon stick
- 2 cardamom pods
- 1 tsp black pepper powder
- 1 tbsp ghee
- Salt, to taste

Instructions
- Start by soaking the kidney beans (rajma) for 8 hours. After soaking, pressure cook the beans with water and salt for 30 minutes. Once the pressure releases, drain the beans and set them aside.
- Wash the rice thoroughly and set it aside as well.
- In a mortar and pestle, grind the cardamom, cinnamon, and cloves into a fine powder. Set this spice mix aside.
- Heat ghee in a saucepan over medium heat. Add the finely chopped garlic and ground spices, and sauté for 2-3 minutes until fragrant.
- Add the washed rice and cooked kidney beans to the saucepan. Stir well.
- Sprinkle black pepper powder, salt, and pour in 1 1/2 cups of water. Bring the mixture to a boil.
- Once it boils, reduce the heat to low, cover the pan, and cook until the rice is fully cooked, about 15-20 minutes.
- Once done, turn off the heat and let it sit, covered, for an additional 10 minutes to allow the flavors to meld.
- Serve your Spiced Rajma Pulao hot, accompanied by Tomato Onion Cucumber Raita and Papad for a delightful dinner.
