- 1 cup Dosa rice (soaked for 2 hours)
- 1 Cucumber (cut into chunks)
- 1/2 cup Fresh coconut (grated)
- 1 tablespoon Salt

Instructions:

Soak the rice: Wash the dosa rice thoroughly and soak it in water for 2 hours.

Grind the batter:
- In a mixer, grind the cucumber and fresh coconut into a smooth paste.
- In a separate mixer, grind the soaked rice with 1/2 cup of water into a smooth paste.

Combine the batters: Mix both the rice batter and the cucumber-coconut paste in a large bowl. Add salt and stir to combine. If the batter is too thick, gradually add more water to achieve a smooth, flowing consistency. The batter should coat the back of a spoon thinly, not thickly. Adjust salt as needed.

Preheat the pan:
- Grease and preheat a seasoned iron pan until it’s sizzling hot. Test the heat by sprinkling a little water on the pan; it should sizzle and evaporate quickly.

Cook the Neer Dosa:
- Pour a ladleful of batter onto the hot pan in a circular motion starting from the outer edges. The batter will naturally spread and form holes. Do not spread it manually.
- Fill in any gaps with more batter, but allow some holes to remain in the dosa.
- No need to add oil while cooking. Neer Dosa cooks quickly, and once the top is no longer raw and the dosa turns a rich white color, it’s ready. Each dosa should take around 30 seconds to cook.

Fold and serve:
- Once cooked, use a flat spatula to slide under the dosa, folding it into half and then into another half to form a triangle.
- Place the cooked dosa on a platter and continue making more dosas in the same way. Ensure they’re spaced out as they tend to stick together when hot.

- Serve the Cucumber Neer Dosa warm with Kori Gassi (chicken curry) for a delightful Mangalorean meal. End your meal with Konkani Style Mande/Mandige/Chavde for a perfect finish.
