Ingredients:

  • For Taco Filling:

    • 1 1/2 cups Sweet Potatoes, boiled
    • 1/2 cup Canned Black Beans
    • 1/2 teaspoon Paprika Powder
    • 1/2 teaspoon Cumin Powder (Jeera)
    • 1/4 teaspoon Salt
    • 1 tablespoon Oil
    • 4 Corn Flour Tortillas
  • For Avocado Cream:

    • 1 Avocado, sliced and mashed
    • 3 Shallots
    • 2 cloves Garlic, finely chopped
  • For Cabbage Salad:

    • 1 cup Purple Cabbage, shredded
    • 1 tablespoon Lemon Juice
    • 1 teaspoon Vinegar
    • 1/4 teaspoon Salt

Preparation Time: 20 minutes

Cooking Time: 30 minutes

Instructions:

  1. Prepare the Avocado Cream:
    In a blender, add the shallots and garlic cloves. Grind them into a fine paste.
    In a mixing bowl, scoop out the pulp of the ripe avocado and mash it with the back of a spoon.
    Add the ground shallot and garlic mixture to the mashed avocado and combine well. Set aside.

  2. Make the Cabbage Salad:
    In a separate bowl, add the shredded cabbage, lemon juice, vinegar, and salt. Mix them well and allow the cabbage to soak in the vinegar for added flavor. Set aside.

  3. Prepare the Taco Filling:
    Heat the oil in a pan over medium heat. Add the boiled sweet potatoes, black beans, paprika powder, cumin powder, and salt. Stir and cook until the sweet potatoes are soft and slightly caramelized. This should take around 10–12 minutes.

  4. Assemble the Tacos:
    Warm the corn flour tortillas in a skillet or microwave.
    Place a spoonful of the sweet potato and black bean mixture in the center of each tortilla.
    Top with the cabbage salad and a generous dollop of avocado cream.

  5. Serve and Enjoy:
    Serve the tacos immediately, garnished with extra avocado cream or your favorite condiments if desired.
