Description:
Andhra Style Paruppu Podi is a protein-packed, spicy South Indian delicacy that can be stored for up to 2-3 months. This versatile dal powder pairs wonderfully with hot steamed rice and a drizzle of ghee or sesame oil, making it a perfect accompaniment to any South Indian meal.
Ingredients:
- 2 tbsp Chana dal (Bengal Gram Dal)
- 2 tbsp Black Urad Dal (Split)
- 2 tbsp Arhar dal (Split Toor Dal)
- 2 tbsp Yellow Moong Dal (Split)
- 2 tbsp Horse Gram Dal (Kollu/Kulith)
- 10-12 Dry Red Chillies
- 1/2 tsp Asafoetida (Hing)
- Salt, to taste
- 1/2 tsp Jaggery
- 1 tbsp Sesame (Gingelly) Oil
Instructions:

Roast the Red Chillies:
Heat 1 tablespoon of sesame oil in a kadhai (wok). Add the dry red chillies and roast them on medium heat for 3-4 minutes until aromatic. Once roasted, transfer them to a plate and set aside. -
Roast the Dals:
In the same pan, add the remaining 1/2 teaspoon of oil. Add the chana dal, urad dal, toor dal, moong dal, and horse gram dal. Roast on low flame until the dals turn golden brown. Once done, transfer them to a plate to cool. -
Grind the Ingredients:
Allow the roasted ingredients to cool completely. In a grinder, combine the roasted red chillies, salt, jaggery, and asafoetida (hing). Grind them into a fine powder. Add the roasted dals and grind the mixture into a coarse powder. -
Serve:
Your Andhra Style Paruppu Podi is ready to serve! Enjoy it with hot steamed rice, a dollop of ghee or sesame oil, and a side of Keerai Sambar for a complete South Indian meal.
