Spinach & Broad Bean Shakshuka is a delightful variation of the classic Tunisian dish. This version is made healthier by incorporating broad beans, spinach leaves, and broccoli into the tangy tomato-based gravy. Shakshuka, meaning “mixture,” is traditionally poached eggs served in a flavorful sauce, and once you break the eggs, their yolks ooze into the simmering gravy, enhancing its rich taste. Perfectly paired with a piece of bread, it’s a fulfilling and nourishing lunch.

Ingredients:

  • 1 cup Avarekai (Broad Beans)
  • 1 cup Broccoli (cut into small florets)
  • 1 cup Spinach Leaves (Palak)
  • 1 Onion (sliced)
  • 2 cloves Garlic (chopped)
  • 4 Tomatoes (chopped)
  • 1 tsp Red Chilli Powder
  • 2 tsp Dried Oregano
  • 1 tsp Dried Thyme Leaves
  • 2 tsp Red Chilli Powder
  • 1 tsp Cumin Powder (Jeera)
  • 1 tsp Sugar
  • 2 Whole Eggs
  • Salt (to taste)
  • Oil (for cooking)

Preparation Time: 10 minutes
Cooking Time: 45 minutes
Total Time: 55 minutes

Instructions:

  1. Heat a saucepan with oil. Add sliced onions and chopped garlic, sautéing them until they turn translucent.
  2. Add chopped tomatoes, sprinkle a little salt, and stir-fry until the tomatoes soften and the raw smell disappears.
  3. Stir in the spinach leaves and sauté until they wilt, which will take about 10 minutes.
  4. Add the spices (red chilli powder, oregano, thyme, cumin powder, and sugar), and toss everything together.
  5. Add the broccoli and broad beans, then pour in about 1/2 cup of water. Cover with a lid and cook for about 10 minutes, or until the vegetables become tender.
  6. Once cooked, open the lid and stir to combine the ingredients.
  7. Crack the eggs into the mixture, spacing them evenly. Sprinkle a little salt and pepper on top. Cover with the lid again and cook for about 5 minutes, or until the eggs are poached to your liking.
  8. Serve hot with garlic bread or focaccia bread for the perfect accompaniment.
