- 1 cup Curd (Dahi / Yogurt), sour
- 2 cups Water
- 1 tsp Green Chilli Paste
- 1/4 tsp Asafoetida (hing)
- 1/4 tsp Turmeric powder (Haldi)
- Salt, to taste
Ingredients for Seasoning:
- 1/2 tsp Mustard seeds (Rai/Kadugu)
- 1/2 tsp Cumin seeds (Jeera)
- 1 tsp Sesame seeds (Til seeds)
- 6 Curry leaves
- 2 tbsp Fresh coconut, grated
- 2 tbsp Coriander (Dhania) Leaves, chopped
- 2 tbsp Oil

Prepare the Batter:
In a large bowl, combine the yogurt, water, and gram flour. Whisk thoroughly until the mixture is smooth and free of lumps. Add the green chilli paste, asafoetida, turmeric powder, and salt. Mix well. -
Cook the Mixture:
Transfer the khandvi batter into a non-stick pan and place it on low-medium heat. Stir constantly to avoid lumps. Continue cooking and stirring for about 15 minutes, until the mixture thickens and starts to shine. -
Spread the Mixture:
Once the batter thickens, remove the pan from the heat. Quickly spread the hot mixture onto a flat surface (such as a countertop or large baking tray) using a flat spatula. Spread it as thinly as possible. -
Cool and Roll:
Let the spread-out mixture cool for a few minutes until it is firm but not completely cold (about 3-5 minutes). Once it firms up, start rolling it gently from one side into a log. After rolling, cut the log into 1-inch long pieces to create the pinwheels. -
Seasoning:
Heat oil in a small pan and add the mustard seeds, cumin seeds, sesame seeds, and curry leaves. Allow them to crackle and then pour this seasoning over the prepared khandvi rolls. -
Garnish and Serve:
Garnish the khandvi with freshly grated coconut and chopped coriander leaves. Serve immediately or refrigerate to store for later use. You can warm it in the microwave before serving.
