Ingredients:
- 2-1/2 cups Tomatoes, finely chopped
- 1/2 teaspoon Mustard seeds (Rai/ Kadugu)
- 1/2 teaspoon Cumin seeds (Jeera)
- 4 Curry leaves, finely chopped
- 1/4 teaspoon Asafoetida (hing)
- 2 Green Chillies, finely chopped
- 1 teaspoon Ginger, grated
- 1/2 teaspoon Turmeric powder (Haldi)
- 1/2 teaspoon Red Chilli powder
- 1 teaspoon Sugar
- 2 teaspoons Oil
- Salt, to taste

Cook Time: 20 minutes
Instructions:
- Heat oil in a skillet over medium heat. Add the mustard seeds, cumin seeds, asafoetida, and curry leaves. Let them crackle for a few seconds.
- Add the chopped tomatoes, green chilies, grated ginger, turmeric powder, red chili powder, and sugar. Stir well to combine.
- Cover the pan and let the mixture simmer for 10 to 15 minutes, or until the tomatoes are tender and have released their juices.
- Once cooked, turn off the heat and let the chutney cool to room temperature before serving.
