Vietnamese Grilled Chicken Bánh Mì Recipe
A delicious and healthy Vietnamese-style grilled chicken sandwich that’s perfect for lunch or a weekend meal.

Ingredients

  • 1 Baguette (12-inch)
  • 4 tablespoons Classic Mayonnaise (With Egg)
  • 2 tablespoons Sriracha sauce
  • 3 sprigs Coriander (Dhania) Leaves
  • 2 stalks Spring Onion (Bulb & Greens), cut lengthwise
  • Extra Virgin Olive Oil (for cooking)
  • For Pickled Vegetables:
    • 1 English Cucumber, sliced
    • 1 Red Bell Pepper (Capsicum), sliced
    • 1 Green Bell Pepper (Capsicum), sliced
    • 1 Carrot (Gajjar), cut into julienne
    • 1 Mooli/Mullangi (Radish), sliced
    • 2 Pickled Jalapeños, sliced
    • ½ cup Chilli vinegar
    • 1 tablespoon Sugar
    • Salt and Pepper, to taste
  • For the Grilled Chicken:
    • 250 grams Chicken Breasts, cut into strips
    • 1 tablespoon Soy Sauce
    • 2 tablespoons Red Chilli Sauce
    • 1 teaspoon Honey
    • 1 teaspoon Black Pepper Powder
    • 1 teaspoon Dry Ginger Powder

Instructions

  1. Prepare the Pickled Vegetables: In a bowl, combine the cucumber, red and green bell peppers, carrot, radish, and pickled jalapeños. Add the chilli vinegar, sugar, salt, and pepper. Toss everything well and refrigerate while you prepare the grilled chicken.

  2. Marinate the Chicken: In a mixing bowl, combine soy sauce, red chilli sauce, honey, black pepper powder, dry ginger powder, and a pinch of salt. Add the chicken strips and mix well, allowing them to marinate for 10 minutes.

  3. Grill the Chicken: Heat a grill pan over medium-high heat and brush with olive oil. Once hot, place the marinated chicken strips on the pan. Grill for 5 minutes on each side, or until the chicken is cooked through and has nice grill marks.

  4. Assemble the Bánh Mì: Cut the baguette into two halves, each about 6 inches long. Slice one side of the baguette to create a pocket for the filling. Spread 2 tablespoons of mayonnaise evenly on the bread, followed by 1 tablespoon of sriracha sauce.

  5. Add the Fillings: Layer the pickled vegetables on the baguette, then top with the grilled chicken. Place the sliced jalapeños on top of the chicken, followed by a garnish of fresh coriander leaves and chopped spring onions.

  6. Serve: Your Vietnamese Style Grilled Chicken Bánh Mì is now ready! Repeat the process with the second half of the baguette. Serve the sandwich alongside a Red Cabbage, Carrot, Sprout, and Onion Salad, with a refreshing glass of Cantaloupe (Melon) Juice to complete your meal.
