Ingredients:
- 1/2 cup Salted Butter
- 1/2 cup Whole Wheat Flour
- 1/2 cup All-Purpose Flour (Maida)
- 2 tbsp Rice Flour
- 1 tsp Dried Lavender Buds
- 3/4 tsp Baking Powder
- 1 tsp Lemon Zest
- 2 tbsp Lemon Juice
- 2 tbsp Honey
- 1/4 cup Sugar
- Pinch of Salt
- For the glaze:
- 4-5 tbsp Icing Sugar
- Juice of 1 Lemon (or as needed for desired consistency)

Instructions:
- Begin by sifting together the whole wheat flour, all-purpose flour, rice flour, and baking powder into a bowl.
- In a separate bowl, gently crush the lavender buds with 2 tablespoons of sugar using a mortar and pestle or a mixer.
- In a large mixing bowl, cream the salted butter and sugar together until the mixture becomes light and creamy.
- Add honey, lavender-sugar mixture, lemon zest, lemon juice, and a pinch of salt to the creamed butter. Mix well.
- Gradually stir in the flour mixture until just combined. Do not knead the dough.
- Shape the dough into a ball, cover with plastic wrap, and refrigerate for 1 hour.
- Preheat the oven to 160°C (320°F) and line two baking sheets with parchment paper.
- Lightly dust a clean surface with flour and roll out the dough to about 1/4-inch thickness.
- Use a cookie cutter of your choice to cut out the cookies. Gather any leftover dough, reroll it, and cut out additional cookies.
- Place the cookies on the prepared baking sheets and bake for 12-15 minutes, or until the centers are set and the edges are just beginning to brown.
- Cool the cookies on a wire rack.
- For the glaze, whisk together the icing sugar and lemon juice to form a thick paste.
- Once the cookies are fully cooled, drizzle or spread the glaze over them, decorating as desired. Allow the glaze to set before storing the cookies in an airtight container.
