Averekaalu Rava Laddu Recipe – Field Beans Semolina Balls

Ingredients:

  • 1 1/2 cups Semolina (Sooji/Rava)
  • 1/2 cup Avarekalu (Lilva Beans), soaked and skin removed
  • 1/2 cup Grated Dessicated Coconut
  • 1 tsp Cardamom Powder (Elaichi)
  • 1 cup Jaggery
  • 2 tbsp Ghee

Preparation Time: 10 minutes
Cook Time: 45 minutes

Instructions:

  1. Prepare the Avarekalu (Field Beans): Soak the avarekalu (field beans) in water for about 1 hour. Peel the beans after soaking. For a quicker method, you can pressure cook them until just before the first whistle, then drain the water and easily remove the skin.

  2. Roast the Semolina and Coconut: Heat a kadai (pan) over medium flame and dry roast the semolina until golden brown. Remove and set it aside. In the same kadai, roast the desiccated coconut until golden brown and set it aside.

  3. Combine the Ingredients: In the same kadai, add ghee, roasted semolina, roasted coconut, cardamom powder, and peeled avarekalu. Roast the mixture for 2 minutes on medium flame, allowing the flavors to combine.

  4. Prepare the Jaggery Syrup: In another pan, add jaggery and 2 tablespoons of water. Heat it to form a thick syrup that sticks to your finger when tested.

  5. Combine the Syrup and Rava Mixture: Add the jaggery syrup to the roasted semolina and bean mixture. Mix well until all the ingredients are fully combined. Let the mixture cool for 1 minute.

  6. Form the Laddus: Once cooled slightly, grease your palms with some oil or water and shape the mixture into small balls (laddus). Be cautious as the mixture will be hot.

  7. Serve: Enjoy Averekaalu Rava Laddu as a delightful dessert after your meal, or simply enjoy it as a snack!
