Kerala Style Jackfruit Seeds Stir Fry

Kerala Style Jackfruit Seeds Stir Fry is a delicious dish made with ripe jackfruit seeds. The seeds are steamed and cooked with coconut and a blend of spices, resulting in a flavorful and aromatic stir fry. This dish can be served with dal (lentils) and rice for a complete and satisfying meal.

Ingredients:

  • 3 cups steamed jackfruit seeds (peeled)
  • 1 onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/4 cup grated coconut
  • Salt, to taste
  • Oil, for cooking

Preparation Time: 10 minutes
Cooking Time: 40 minutes

Instructions:

  1. Start by steaming the jackfruit seeds until soft. Once done, peel the seeds and set them aside in a bowl.
  2. Heat oil in a pan. Add mustard seeds and allow them to pop for 10-15 seconds.
  3. Add the sliced onion and sauté until it turns soft and translucent.
  4. Add the steamed jackfruit seeds to the pan and stir well.
  5. Sprinkle in the red chili powder, turmeric powder, coriander powder, and cumin seeds. Add a little water and mix everything thoroughly.
  6. Cover the pan and cook on medium heat until the jackfruit seeds and spices are well cooked.
  7. Once cooked, add grated coconut, stir to combine, and cook for a couple of more minutes.
  8. Serve hot with rice and dal for a hearty lunch!
