Ingredients:
- 2 cups cooked Rice
- 1/4 cup Carrots (Gajjar), chopped
- 1/2 cup Green Bell Pepper (Capsicum), chopped
- 1 cup Drumstick Leaves (Moringa/Murungai Keerai)
- 2 tablespoons Green Chilli Sauce
- 2 tablespoons Soy sauce
- 1 tablespoon Tomato Ketchup
- Salt, to taste
- 2 tablespoons Oil
Preparation Time: 25 minutes
Cooking Time: 10 minutes
Instructions:
- Heat 2 tablespoons of oil in a wok over medium heat. Add the chopped carrots and a pinch of salt. Sauté until the carrots turn soft.
- Add the drumstick leaves and cook for a few more minutes, allowing them to soften and release their flavor.
- Next, stir in the chopped capsicum, soy sauce, green chili sauce, and tomato ketchup. Cook until the vegetables are tender and well coated with the sauces.
- Add the cooked rice, along with more salt to taste, and toss everything gently to combine. Continue to cook for another minute, making sure all the ingredients are well mixed.
- Serve your Drumstick Leaves Fried Rice hot, either on its own or with a side of Chilli Baby Corn (Manchurian) to complete your meal.
